Yellowtail Kingfish Automated Filleting

When filleting finfish such as Yellowtail Kingfish, automation can make a significant difference to cost over time.

Automated fish filleting machines have evolved over time with patents listed as far back as the 1920’s in the United States.

Technology has advanced to a stage where automated filleting machines can fillet fish up to 1 metre long at a rate of 20 per minute. The machines are able to quickly assess the dimensions of the fish including weight, length and girth.

Waste from the machines can be re-used as in fishmeal production.

Potential limitations to these machines is that they require regular cleaning. Parts and Service may be costly. Full cost/benefit should be undertaken prior to purchase.
